Chutneys are an important part of Indian cuisine. These are the delectable side dishes or condiments that enhance the flavour with which it’s paired. In every nook and corner of the country, you will find chutney made in different styles to accompany a meal. One such chutney is Tamil Nadu’s popular Kara Chutney. It’s made with onions, tomatoes, spices and herbs and can be prepared with idlis, dosa, appam, uttapam and much more.
The word Kara means spicy. So, Kara Chutney is a spicy condiment and is enjoyed by people of all ages. If you are bored with your regular chutneys and want to indulge your tastebuds in something flavourful and unique, try out Kara Chutney. It is quite easy to make and will leave you licking your finger because of its drool-worthy taste.
Ingredients
To make this chutney, we will need sesame oil, urad dal, chana dal, onions, garlic, red chillies, tomatoes, salt, tamarind, mustard, seeds, curry leaves and hing.
Recipe
To make this delicious Chutney follow the recipe below –
- In a pan, pour some sesame oil and then add urad dal and chana dal. Sauté till both start to turn golden.
- Add some sliced or chopped onions and saute till it turns golden. Then add garlic.
- The next step is to add dry red chillies. Saute them for half a minute or till the chillies change their colour.
- Now, you add tomatoes. Give it a good store and then add salt. Add a bit of tamarind and then sort the tomatoes on low heat till they soften.
- Let the mixture count and then grind it or blend it by adding a bit of water to make a smooth paste.
- In a pan, pour in some sesame oil and add some mustard seeds. Let it crackle.
- Add a few curry leaves and a pinch of hing. Saute till the leaves become crispy. Add this tempered mixture to the Kara Chutney and give it a good mix
You can serve it with dosa, vada, uttapam, or have it with roti as well.
