Method:
- Heat olive oil in a pressure cooker over medium heat.
- Saute chopped garlic, onions, beetroot, and carrots until tender (about 5 minutes), stirring often.
- Add spinach and water, reduce heat to simmer, and partially cover. Let it melt for 25 minutes or until two whistles in a pressure cooker.

- 1 tbsp olive oil

- 4 Bell Peppers
Method:
- Heat olive oil in a large pan on a medium heat.
- Add chopped onion and cook it until golden brown.
- Now, cook sliced mushrooms, chopped carrots, and chopped bell pepper for 5-10 minutes.
- Add baby spinach and chopped fresh parsley to the mix.
- Add cinnamon powder, cumin powder, and 3 cups of Quinoa.
- Mix it properly and add salt and black pepper as per your taste.
- You can also add chopped cashews and cook for 1-2 minutes.
- Prepare 4 bell peppers by removing the seeds.
- Stuff each pepper with the quinoa mixture and cook them in an oiled pan until the peppers are tender and cooked through.
