In India, rice stands as a staple grain and a key ingredient in various dishes and cuisines. Numerous rice varieties are cultivated worldwide. Black rice is gaining popularity for its health benefits and superiority over white rice. It is made by removing the outer husk and belongs to the whole grain family. Black rice, rich in iron and fibre, is believed to have cancer-preventive properties. Starting the day with black rice porridge is said to provide sustained energy and keep hunger at bay.
Ingredients
Black rice – 200 grams
Algae lentils – 4 spoons
Chives – 1/2 handful
Tomato – 1
Carrot – 1
Garlic – 3 cloves
Water – 6 cups
Green chillies – 2
Coconut Milk – 300ML
Coconut Oil – as required
Fenugreek – 1/4 tsp
Cumin – 1/2 tsp
coriander leaves
Mint Leaf
Salt – as needed
Recipe
Soak black rice for 8 hours. Keep the soaked black rice water separately, as it can be added while making porridge.
Filter the soaked black cotton rice without water and put it in a mixer jar along with the washed dal. Grind it into a fine paste.
Cooking Process
Place the cooker on the stove and add a small amount of oil. Heat it, keeping the flame at a moderate level.
Add fenugreek seeds, cumin seeds, and chopped garlic. Stir well.
Add chopped onions to the mixture and stir it well.
Then add some chopped carrots and tomatoes to it.
Saute with the required amount of coriander and mint leaves.
Blend chopped tomatoes and stir thoroughly. Sauté the ingredients slowly.
After a few minutes, add ground black rice.
Pour 6 cups of water
Add salt as per your preference and stir.
Add two green chillies to the mixture and let it boil thoroughly.
Cover the cooker
Keep it on medium flame until 4 to 5 whistles.
Take off the whistle and stir the porridge thoroughly to prevent lumps.
Add thickened coconut milk to the porridge and mix well.
Ensure the stove is switched off while pouring the coconut milk
Lastly, add chopped coriander leaves to the porridge. Your black rice porridge is ready to be served
