Onion Vadagam is a popular South Indian condiment. This is made from a few ingredients, including onions, urad dal and spices. The mixture is sun-dried to create a crispy and savoury texture. Ingredients required:
Onion – 1.5 cup
Garlic cloves – 1/2 cup
Curry leaves
Urad Dal – 1/4 cup (soak for 30 minutes)
Mustard – 1 tablespoon
Cumin – 1 tablespoon
Fenugreek – 1/2 tablespoon
Red Chilli Powder – 1 tablespoon
Turmeric – 1 tablespoon
Salt – as required
Castor oil – 2 tablespoons
Cooking oil – for frying
Recipe:
Step 1: Peel the onion, wash and dry it completely. Then finely chop onion, garlic and curry leaves and mix all three together.
Step 2: Add mustard seeds, fenugreek seeds, coriander seeds, cumin seeds, salt and red chilli powder and mix well with your hands.
Step 3: Next, grind the soaked urad dal in a mixer.
Step 4: Now, add it to the onion mixture and mix it well. Take the mixture in a small section and roll it into lemon-sized balls. Dry the balls under the sun for a few days until they are completely dry.
Step 5: Store the balls in an airtight container.
Step 6: Whenever needed, you can take a small piece, fry it in oil till golden and add it to your dishes for extra flavour.
