Beetroot Dosa To Quinoa Bell Peppers: Healthy Recipes To Try This Winter Season

Vegetable Soup

Ingredients:

  • 1 tablespoon of olive oil
  • 5 cloves of minced garlic
  • 2 large chopped onions
  • 2 carrots
  • 150 grams of spinach
  • 1 Beetroot

Method:

  1.  Heat olive oil in a pressure cooker over medium heat.
  2. Saute chopped garlic, onions, beetroot, and carrots until tender (about 5 minutes), stirring often.
  3. Add spinach and water, reduce heat to simmer, and partially cover. Let it melt for 25 minutes or until two whistles in a pressure cooker.
  4. Strain broth into a bowl using a mesh strainer, discarding solids.
  5. Cool and store the liquid in airtight containers or freezer bags.
  6. Re-purpose leftover veggies for soup or incorporate them into dough for added nutrition.

Beetroot Dosa: 

A South Indian delicacy can be transformed into a wholesome and nutritious winter treat.

Ingredients:

  • Beetroots-1/2 cup
  • Dosa batter
  • Ginger-Grated (1 tbsp)
  • 2 cloves garlic
  • Salt- to taste

Method:

  1.  Begin with peeled beetroot.
  2. Create a smooth puree by blending peeled beetroots and adding cumin powder and garlic.
  3. Combine the beetroot puree with dosa batter.
  4. Mix thoroughly, adjusting batter consistency with water as needed.
  5. Heat a dosa pan, and as soon as the dosa starts turning brown, flip it to cook both sides.
  6. Serve and enjoy your vibrant and flavorful beetroot dosas.

Quinoa Stuffed Bell Peppers:

For a lighter yet filling option, try quinoa-stuffed bell peppers.

Ingredients:

  • 1 tbsp olive oil
  • 1 chopped onion
  • 1/2 sliced mushroom
  • 2 chopped carrots
  • 1 chopped bell pepper
  • 1/2 cup parsley
  • 1/2 cup spinach
  • 1 1/2 Cinnamon powder
  • 3/4 tsp cumin powder
  • 3 cups Quinoa
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 Cup chopped Cashew
  • 4 Bell Peppers

Method:

  1. Heat olive oil in a large pan on a medium heat.
  2. Add chopped onion and cook it until golden brown.
  3. Now, cook sliced mushrooms, chopped carrots, and chopped bell pepper for 5-10 minutes.
  4. Add baby spinach and chopped fresh parsley to the mix.
  5. Add cinnamon powder, cumin powder, and 3 cups of Quinoa.
  6. Mix it properly and add salt and black pepper as per your taste.
  7. You can also add chopped cashews and cook for 1-2 minutes.
  8. Prepare 4 bell peppers by removing the seeds.
  9. Stuff each pepper with the quinoa mixture and cook them in an oiled pan until the peppers are tender and cooked through.
  10. Enjoy a flavorful and wholesome dish!
