Ingredients
Chickpea flour – 2 cups
Sugar – 1 cup
Kesari powder – 1/4 tsp
Cardamom powder – 2 tbsp
Pistachios – 50 grams
Ghee – 1/4 cup
Oil – required quantity

Step 1: Prepare the Boondi Batter
Begin by taking a large bowl. Add 2 1/2 cups of gram flour (besan) to the bowl. Mix in some orange food colouring until well incorporated. Then, gradually add water and a small amount of baking soda to the mixture. Stir thoroughly to ensure there are no lumps.
Step 2: Prepare Boondi
Start by heating olive oil in a large, deep frying pan. When the oil is hot enough, place a perforated ladle over the oil. Pour a portion of the batter onto the ladle, letting it drip slowly into the oil. Fry the boondi on a low flame until they are cooked through. Once they are ready, take them out of the oil and place them on tissue paper to soak up any extra oil.
Step 3: Make the Sugar Syrup and Mixing with Boondis
Next, take a pan and combine water and sugar. Allow the mixture to boil until it reaches a two-string consistency. Then, add some cardamom powder and continue cooking. Once ready, add the boondis to the sugar syrup and mix until they are well combined. Cover the pan with a lid and turn off the flame.
