How To Make Mumbai-style Cutting Chai At Home

If you are a tea, aka chai-lover, then you most definitely do not need an excuse to drink tea. Right from the start, when the tea container is opened and you get the first whiff, you instantly feel better and the feeling lasts till you take the last sip. After all, tea does make things better and in India, tea is an emotion. Be it a mundane day or a celebratory occasion, whether you are in a good or bad mood, a cup of chai acts as a great refreshment and instantly energises you. Offering chai and drinking it has become a part of Indian culture. However, the taste of tea varies in every place in the country. One such variant is Mumbai’s favourite cutting chai.

If you are an ardent tea-lover who loves to taste different types of tea or make it at home, here is a quick recipe to make Mumbai’s famous cutting chai at home. The taste of the chai is quite special and right from the first sip you will fall in love with the notes of the flavour. Here is how you can make it at home.

Recipe-

    1. First of all, take an inch of ginger and crush it coarsely. You can also grate it if you like.
    2. Next, add three small green cardamoms (choti elaichi), four cloves, half a teaspoon of black pepper and half an inch of cinnamon and then grind them together. Your chai masala is ready.
    3. Next, take a pan and place it on the stove. Take three cups of water in it.
    4. When the water starts to boil, add these spices to it and boil for three minutes.
    5. Next, add three spoons of tea leaves in it and let it boil for two minutes.
    6. Now, add three spoons of sugar to it and mix.
    7. Your black-flavoured tea will be done in no time.
    8. To add more flavour, add one cup of full cream to the mixture.
    9. When it begins to boil, stir it with a spoon.
    10. As soon as the colour changes, remove it from the flame.
    11. The final step is to pour the chai into the cup from a little height so it creates foam. Your cutting tea is ready!
