Avocado Toast with Jammy Eggs
Ingredients
- 2 eggs
- 1 avocado, halved, peeled and pitted
- 2 slices whole-grain bread, toasted
- 1/4 tsp salt, divided
- 1/4 tsp ground pepper, divided
- 1 tsp extra-virgin olive oil
- 1/4 tsp crushed red pepper
Method
Step 1: Boil the eggs into a saucepan.
Step 2: Place avocado halves, and cut sides down, on a cutting board
Step 3: Cautiously transfer the avocado slices onto toast
Step 4: Sprinkle with salt and pepper
Cheesy Egg Quesadilla with Spinach
Ingredients
- 2 teaspoons extra-virgin olive oil
- 2 cups spinach
- 2 corn tortillas
- 4 shredded cheddar cheese
- 1 egg
- ¼ sliced avocado
Method
Step 1: Add oil to a nonstick pan and leave the flame on low
Step 2: Add spinach and saute it for 1 minute
Step 3: Top 1 tortilla with 2 tsp of cheese
Step 4: Flip the tortilla along with spinach on the other side
Step 5: Place another tortilla at the top with the remaining 2 tsp of cheese
Step 6: Heat another 1 tsp of oil in the pan add the quesadilla and cook until it becomes crispy.
Step 7: Pan-fry the egg and top the quesadilla together
