Stuffed Besan Kachori: A Healthier Twist On Classic Snack

Kachori, a cherished Indian delicacy, needs little introduction. This versatile snack, enjoyed throughout the year, holds a special place at any meal, from breakfast to dinner.

Originating from Rajasthan, Kachori comes in numerous variations, including Onion Kachori, Matar Kachori, and Masala Kachori. Its presence at Indian festivals and weddings underscores its popularity. Traditionally, Kachori is served as street food, paired with potato curry, chutneys, or chole curry to enhance its flavours.

Today, we’re spotlighting a unique version: Stuffed Besan Kachori, a delightful twist on this classic recipe.

Why choose gram flour over wheat?

Gram flour, made from ground chickpeas, offers several health benefits compared to wheat flour. It is gluten-free, making it a suitable choice for those with gluten sensitivities. Rich in fiber, iron, magnesium, zinc, and protein, gram flour is an excellent option for those looking to maintain or lose weight. Its versatility allows it to be used in both savoury and sweet dishes, making it a staple in many kitchens.

How to prepare a stuffed besan kachori?

Stuffed Besan Kachori is a popular choice for various occasions and is relatively easy to prepare. The recipe calls for just a few ingredients and involves making a flavorful gram flour stuffing. Here’s a step-by-step guide:

  • Prepare the dough: In a bowl, mix all-purpose flour, salt, nigella seeds, and ghee. Knead the mixture into a smooth dough and set it aside.
  • Make the stuffing: Heat oil in a pan and add a pinch of asafoetida, cumin seeds, and fennel seeds. Once fragrant, add chopped onion and green chilli, sautéing briefly. Stir in gram flour and cook for about 2 minutes, then add chopped red chilli, coriander powder, and pickle masala. Continue cooking for another 2 minutes before turning off the heat and mixing in fresh coriander leaves.
  • Assemble the kachoris: Heat oil in a deep pan for frying. Take portions of the dough, roll them into balls, and flatten each ball into a disc. Place a spoonful of the gram flour stuffing in the center of each disc. Fold the dough over the stuffing, pinching the edges to seal it. Flatten the filled dough into a circular shape.
  • Fry the kachoris: Deep fry the Kachoris in the hot oil on medium-low heat until golden brown and crispy.Serve the Stuffed Besan Kachoris hot, paired with your favourite chutney or as a delightful snack with tea. This variation offers a healthier twist to the traditional Kachori, combining taste and nutrition in every bite.
